Berry Muffins


This recipe makes about 12 muffins


Ingredients :

  • 160 grams wheat flour
  • 150 ml canola oil
  • 120 grams granulated sugar + some sugar to sprinkle the muffins
  • 60 ml milk
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 200 grams berries (for example : blueberries, raspberries, red currants)

Preheat oven to 220°C and line a muffin tin with paper liners.

In a bowl beat the eggs with granulated sugar, until doubled in volume. While still mixing, drizzle in the canola oil, milk and vanilla extract.

Sift the flour, baking powder and baking soda. Add the dry ingredients to the egg mixture. Using a rubber spatula combine everything gently.

Fold in the berries.

Divide the batter between the paper liners, no more than 3/4 full.

Bake for 5 minutes, then turn down the temperature to 180°C and bake for 14 more minutes.

Remove them from the oven and allow to cool completely.
